How To Make Delicious Chicken Hakka Noodles

WHAT IS HAKKA NOODLES?

Hakka noodles are thin and flat noodles made with 98% whole wheat flour which are cooked in a boiling liquid. 

It is a style of preparation of noodles by the Hakka Chinese in which boiled noodles are stir fried with sauces and vegetables or meat.

It is one of staples in Hakka cuisine which can be made with vegetables, eggs, meat or fish. Furthermore, hakka noodles can be served as a cold noodle salad with olive oil or vinegar and salt. Besides, it can also be added to soups with tofu, vegetables and prawns. 

Hakka noodles are a good source of energy because they are rich in carbohydrates. Moreover, toppings like vegetables or meat help enhance the fiber and protein content of the dish.

So, today we will share some recipes of hakka noodles and show you how to make hakka noodles.

RECIPE 1: CHILI GARLIC HAKKA NOODLES

Ingredients:

  • 300 gms hakka noodles
  • 2 tbsp sesame oil
  • 1 garlic – sliced
  • 1 onion – thinly sliced
  • 1 green chili – finely chopped
  • 1 carrot – cut into julienne
  • 1 bowl cabbage – shredded
  • 1 yellow bell pepper – thinly sliced
  • 1 red bell pepper – thinly sliced
  • 1 green capsicum – thinly sliced 
  • spring onion whites
  • 2 tsp vinegar
  • 2 tbsp soy sauce
  • 1 tbsp red chili sauce
  • 1 tbsp green chili sauce
  • 1 tsp pepper
  • spring onion greens
  • water
  • salt

Instructions:

Cooked Noodles:

  • Add water in a deep pan and wait for the water to boil.
  • Add hakka noodles and salt to taste. Wait for all the noodles cooked. 
  • Turn off the flame and strain it.
  • Add some oil to make sure that it will not stick to each other.
  • Keep it aside to further use.

Chili Garlic Hakka Noodles

  • Heat the sesame oil in a thick pan.
  • Add garlic, onion, green chili and stir.
  • Add carrot, cabbage, yellow bell pepper, red bell pepper, green capsicum and mix well.
  • Add sliced spring onion whites and mix.
  • Add vinegar, soy sauce, red chili sauce, green chili sauce and pepper powder and stir to combine.
  • Add cooked noodles and toss it all together.
  • Stir fry the noodles for 10 minutes.
  • Place it and garnish with some chopped spring onion greens. Serve hot Chili Garlic Hakka Noodles.

RECIPE 2: VEG HAKKA NOODLES

Ingredients:

  • 2 medium size capsicum – cut into julienne 
  • 1 medium size carrot – cut into julienne 
  • 1 cup cabbage – shredded 
  • 1 packet hakka noodles
  • water
  • salt
  • 1 tbsp oil
  • 1 tbsp garlic – chopped
  • ¼ cup spring onion bulbs – sliced
  • ¼ cup spring onion green – chopped
  • pepper
  • sugar
  • 1 tbsp soy sauce
  • 1 tbsp chili oil
  • 1 tbsp spring onion greens – chopped
  • 1 tsp vinegar

Instructions:

Cooked Noodles:

  • Add water in a deep pan and wait for the water to boil.
  • Add hakka noodles and salt to taste. Wait for all the noodles cooked. 
  • Turn off the flame and strain it.

Veg Hakka Noodles:

  • Heat the oil in the thick pan. 
  • Add garlic, spring onion bulbs and saute for a minute.
  • Add spring onion greens, shredded cabbage, julienne carrots, julienne capsicum, sugar to taste, mix and saute for 2 to 3 minutes. 
  • Add cooked noodles, salt and pepper to taste, soy sauce, chili oil, chopped spring onion greens, mix and toss for 3 to 5 minutes.
  • Add vinegar and toss once again.
  • Place it. Serve hot Veg Hakka Noodles with schezwan sauce.

RECIPE 3: CHICKEN HAKKA NOODLES

Ingredients:

  • 150 gms chicken – boiled in water with salt and pepper powder and shredded
  • 150 gms pack of hakka noodles
  • 2 tsp garlic – chopped
  • 1 medium white onion – sliced
  • 3 green chilies – sliced
  • 1 cup julienne carrots
  • 1 cup shredded cabbage
  • 1 cup julienne green bell peppers / capsicum
  • 3 tbsp spring onion greens
  • 2.5 tsp soy sauce
  • 2 tsp white vinegar
  • salt
  • ¼ tsp pepper powder
  • 1.5 tbsp refined oil

Instructions:

Cooked Noodles:

  • Add water in a deep pan and wait for the water to boil.
  • Add hakka noodles and salt to taste. Wait for all the noodles cooked. 
  • Turn off the flame and strain it.
  • Add some oil to make sure that it will not stick to each other.
  • Keep it aside to further use.

Chicken Hakka Noodles

  • Heat the oil in a wok.
  • Add sliced onion and stir fry on high heat for 30 seconds.
  • Add sliced chilies, mix and saute on high heat for 30 seconds.
  • Add julienne carrots, shredded cabbage, mix and saute on high heat for 1 minute.
  • Add chicken pieces and mix.
  • Add julienne green bell peppers, mix and saute on high heat for 1 minute.
  • Add cooked noodles and toss to combine.
  • Add soy sauce, white vinegar and toss to coat with the sauce.
  • Add salt to taste, pepper powder, mix well and toss on high heat for 2 minutes.
  • Place it and garnish with chopped spring onion greens. Serve hot Chicken Hakka Noodles.

RECIPE 4: HAKKA NOODLES SOUP

Ingredients:

  • 2 tbsp oil
  • 4 tbsp garlic – chopped
  • 1 tbsp ginger – chopped
  • 2-3 green chilies – chopped
  • 1 tbsp coriander leaves – chopped
  • 1 tbsp spring onion greens – chopped
  • 2 litres hot water
  • 1 tbsp soy sauce
  • 1 tbsp green chili paste
  • 1 tsp white vinegar
  • salt
  • black / white pepper
  • ⅓ cup carrots – chopped
  • ⅓ cup capsicum – chopped
  • ½ cup cabbage – shredded
  • 200 gms hakka noodles
  • 2 tbsp corn flour + 1 tbsp water – mixed
  • 2 tbsp spring onion greens – chopped

Instructions:

  • Heat the oil in a wok.
  • Add garlic, ginger, green chilies, coriander leaves, spring onion greens and saute it for a minute.
  • Add hot water, soy sauce, green chili paste, vinegar, sugar, salt and pepper powder to taste. Mix and wait for it to boil.
  • Add carrots, capsicum, cabbage, hakka noodles and simmer till all the noodles are boiled.
  • Add the mixture of cornstarch with water into the boiling soup, stir well and cook for 2 to 3 minutes. 
  • Place it and serve hot Hakka Noodles Soup.
