How To Make Simple And Healthy Rava Dosa

WHAT IS RAVA DOSA?

Rava dosa, also known as Sooji dosa, is thin, lacy and crisp. It is a quick and popular dosa from South Indian cuisine. Rava dosa is made with semolina or cream of wheat, rice flour, spices and herbs. It is a very easy and simple dosa.

So, today we will show you how to make a quick and easy rava dosa.

HOW TO MAKE INSTANT CRISPY RAVA DOSA

Ingredients:

  • 1 cup rava / sooji 
  • 1 cup rice flour 
  • ¼ cup maida – refined flour
  • ½ cup onion – finely chopped 
  • coriander leaves – chopped
  • green chili – finely chopped
  • curry leaves – chopped
  • 1 tsp peppercorns 
  • 1 tsp cumin seeds 
  • ¼ cup curd 
  • 4 cups water
  • salt
  • oil or ghee

Instructions:

  • Add rava / sooji, rice flour, maida flour in a large bowl and mix.
  • Add chopped onion, chopped coriander leaves, chopped green chilies, peppercorns, cumin seeds, salt to taste, 4 cups water and curd and stir to combine.
  • Whisk till smooth without any lumps. The batter has to be flowing and thin.
  • Heat a pan up.
  • Use a hand or ladle to pour the batter. If you use a ladle to pour the dosa batter, you should start from the edges  and move towards the center. Add oil / ghee as needed. Cook for 5 minutes on the medium flame until it turns golden and crispy.
  • Fold and then serve rava dosa hot.
  • Repeat for the rest until the batter runs out.

Notes:

  • The flours settle down at the bottom of the batter. So you have to stir and mix well every time before you make dosa. In case the batter becomes thick after making a few dosa, then add some water and stir again. Make all dosa by this way.
  • You can use a heave or thick bottomed tawa or a cast iron pan instead a pan to make sure the rava dosa does not stick to the pan.
  • You should pour the batter start from the edges  and move towards the center so that you can get the netted effect on the rava dosa.
  • Don’t spread the batter. Just pour it thinly.
  • Serve hot Rava Dosa as soon as they are made for the best taste.
  • You can serve Rava Dosa with coconut chutney or samba. For the best taste, you can serve with potato masala. Moreover, it can be combined with peanut chutney or onion chutney or tomato chutney or ginger chutney.

HOW TO MAKE RAVA DOSA WITHOUT RICE FLOUR

Ingredients:

  • 2 cups rava or semolina
  • ½ cup maida or refined flour
  • salt
  • 1 cup curd or yogurt – sour is better
  • water
  • ½ tsp baking powder or ¼ tsp baking soda

Instructions:

  • Add rava, maida, salt as per taste in a large bowl and mix.
  • Add curd or yogurt and stir to combine.
  • Add 2 cup water and mix well. Then rest the batter for 20 to 30 minutes.
  • Add 2 cup water and mix.
  • Add baking powder or baking soda and stir to combine well.
  • Whisk till smooth without any lumps. The batter has to be flowing and thin.
  • Heat the pan up. Spread the oil on over the pan. Sprinkle some water on the pan. Use a cloth to wipe off the oil.
  • Pour 2 tbsp batter in the middle of the pan. Spread the batter evenly in a circle to the edge of the pan.
  • Sprinkle ½ to 1 teaspoon oil on the top and sides when it looks cooked. Spread oil on over rava dosa by spoon.
  • Cook until it turns to golden and crispy. Flip and cook the second side for 30 seconds to 1 minutes or as needed.
  • Fold and serve the hot rava dosa with coconut chutney or samba or potato masala.
  • Serve hot rava dosa as soon as they are made for the best taste.
  • Repeat for the rest until the batter runs out.
